Lentils (Daal) are very important for vegetarian meals. In India, daal is a staple diet. Daals are rich in protein, folic acids, fibers, and some of them contain iron too.

The use of lentils is versatile. They can be used in soup preparations, snacks (veggie kebabs...), salads, as a stuffing of Indian bread (paratha/kachuri) etc. They can also be served as a main course and there is a huge range of Indian desserts made out of lentils/pulses. In this section we are going to make different lentils as a side dish of main course.

>Lauki Chane ki DalLauki Chane ki Dal- Lauki Chane ki dal (bottle gourd and gram lentils) is a very delicious as well as nutritious preparation. Lauki/ bottle gourd is a very light vegetable and makes a perfect dish with the combination of Gram Dal (chana dal). Those who don’t like plain lauki will appreciate this preparation.
Dal Makhani Dal Makhani - Dal Makhani is made with the combination of two whole lentils : Red beans (rajma) and Whole Urad (sabut urad). This is a rich lentil preparation, as it has milk, and butter in it. This is a very delicious dal, and can be served with butter naan.
Urad Dal Urad Dal- White urad dal is rich in protein and soluble fibers like other lentils. This is the split lentil without the outer skin. This is a North Indian preparation of Urad dal and usually served with roti instead of rice.
Rajma Rajma- This is a delicious bean preparation from North India. Rajma (red kidney beans) are rich in soluble fibers, and a good source of protein, iron, magnesium etc. Rajma-Chawal is a very delicious and popular combo meal.
Arhar Dal Arhar/Toor Dal- Arhar Dal is also called as toor dal or pigeon pea. It is yellow in colour and the most common dal in all over India. While in North Indian cuisine it is flavored with spices and served with roti and rice,in South Indian cuisine it is used to make sambar, rasam etc.
masoor Dal Masoor Dal- is black from outside and the grain is red from inside. There are a variety of masoor dal, like green masoor also called as Le lentile vert, black golden, whole grain and split red masoor etc.
lobiya Lobiya (Lobiya is also known as black eyed beans or black eyed peas is a good source of potassium, magnesium and calcium. They are rich in soluble fibers and are a good source of protein and vitamins. There are so many different ways lobiya can be cooked. Here I am sharing a North Indian curry preparation made with lobiya.

Kadhi Kadhi- Kadhi Chawal is actually a lunch combo from North of India.Kadhi is deep fried balls of gram flour paste's , dipped in yogurt based gravy.Chawal is a Hindi word for rice.
sambhari Sambhar- is a South Indian lentil preparation. It is a delicious and very nutritious dish, as it has, vegetables, lentils, tamarind juice and spices in it. Sambhar is made in different ways in each state of Southern India. It is served with rice, idli, Dosa, Uttapam etc ..
