Pasta !

Pasta is a staple food in traditional Italian cuisine, and is available the world over. There are more than three hundred different kinds pasta are produced in Italy. The pastas are usually classified according to the flour used to make them and also their shape. There are mainly two basic styles of pasta-

1. Fresh Pasta - fresh pasta is usually made with durum wheat and egg. Fresh pasta can be made at home or it can also be bought in the freezer section of supermarkets..

2. Dried pasta- dried pasta is made from durum wheat and water. It is available in packets in most supermarkets.

I buy both dried and fresh pasta from the local organic stores.

Some commonly known pasta are :Spaghetti ( long straight pasta), Tofe rigate Penne, Ziti, Fusilli, Lasagne, Linguine, Rotini, Ravioli (stuffed pasta), Macaroni (elbow shape), Farfalle (butterfly shape)etc.... In my kitchen, some of the pastas are as follows-

Sauces for pasta- There is a variety of sauces made for pasta such as pesto sauce, butter and sage, Aglio Olio, white sauce with cheese, etc. Outside Italy, and outside Europe, two sauces are most commonly known- 1 Tomato sauce (Marinara sauce) and 2 White creamy sauce (Alfredo Sauce).
