Atte ka Halwa also known as sheera, made with wheat flour. This is one of the most traditional Indian sweet dishes made all over India. While in Northern India it is called as aate ka halwa, in Maharashtra and Gujarat it familiar with ate ka sheera name.

Ingredients (serves 4-6)

  • Ghee ½ cup
  • Wheatt flour (gehun ka aata)1 cup
  • Water 1 cup
  • Sugar about ¾ cup, or as per taste
  • Thinley sliced almonds. cashews 1-2 tbsp (optional)
  • cardamoms 2-3

Method of preparation

  1. Remove the outer green cover of the cardamoms and grind them in the mortar and pastle.
  2. Heat ghee in a wok on medium heat. Add wheat flour. Roast the flour for a few minutes.
  3. The wheat flour will look golden brown and will be aromatic when it is roasted well.

  1. Add in sugar and mix well with the roasted flour.

  1. Add about 1 cup warm water in the roasted flour and cook it on low heat. And mix well.

  1. Cook until sugar is completely blended in the halwa and consistency is perfect.

  1. Add cardamoms and nuts. Mix well. Turn off the heat.
  2. Wheat flour halwa is ready. Transfer the halwa in a serving dish and garnish with a few slivered almonds. Serve delicius and hot halwa.

Some Tips/ Suggestions:

  1. Traditional recipe calls for equal amount of ghee and flour ! I have reduced the amount of ghee for a healthier preparation. It is your wish if you want to add more ghee.
  2. You can also add some raisins or some other nuts and fruits in this halwa preparation.
  3. You can increase or decrease the amount of sugar as per taste.
  4. I have used light brown organic sugar in this halwa preparation. The color of your halwa may be a little different if you are using white sugar.
