Ingredients
(serves 4)

 

  • Lobiya (Black eye beans)  1 cups
  • Onion     1 big
  • Tomatoes puree       ½ cup
  • Ginger  1inch piece
  • Green chili 1
  • Salt 1 ½ tsp or to taste 
  • Coriander powder  2 tsp 
  • Garam masala 1 tsp
  • Roasted & grounded cumin      ½tsp
  • Red chili powder     ½ tsp
  • Ghee/oil 2 tbsp
  • Chopped coriander leaves    2 tbsp

Method of preparation

  1. Clean, wash, and soak the lobiya (black eye beans)  in  3 cups of water over night.

  2. Boil the lobiya with 1 tea spoon salt in the pressure cooker on medium flame, take one whistle. (It takes around 10-15 minutes to get them tender) .

  3. Peel off, wash and roughly chop the onion. Peel off and wash the ginger. Remove the stem of the green chili.

  4. Make a fine paste of ginger, green chili and onion.

  5. Heat ghee/oil in a pan and fry onion till it becomes golden brown now add garam masala, cumin powder, red chili powder, coriander powder and remaining salt, fry for a minute. Add tomato puree in the fried masala and cook until masala leaves the sides of the pan.

  6. Add boiled lobiya in the fried masala , add water if required to get the required consistency, and cook for 10 minutes.

  7. Garnish with coriander leaves.

Serve with roti or rice or why not both !
