This recipe of Thai fried rice simply came by a chance! One beautiful evening I was all set to make Pad Thai on my daughter's request. I started gathering the ingredients, only to realize that I did not have any rice noodles. Since Pad Thai sauce was already made so I looked around for other options and noticed that I had some plain cooked rice in the fridge. I decided to give it a try with rice. The result was fantastic and well appreciated! After that day this recipe became a must with Thai menu planning.
Here is my version of Thai rice recipe. You can choose the veggies as per availability. I keep changing the vegetables and all combinations come out delicious with flavorings. I use homemade sauce and lots of vegetables to make this dish healthier. I have also used fresh Thai basil leaves to enhance the aroma of this rice dish. Thai basil grows well in Tropical climate, so it is easily available in India. The level of spices can be increased as per taste.
