This recipe of Thai fried rice simply came by a chance! One beautiful evening I was all set to make Pad Thai on my daughter's request. I started gathering the ingredients, only to realize that I did not have any rice noodles. Since Pad Thai sauce was already made so I looked around for other options and noticed that I had some plain cooked rice in the fridge. I decided to give it a try with rice. The result was fantastic and well appreciated! After that day this recipe became a must with Thai menu planning.

Here is my version of Thai rice recipe. You can choose the veggies as per availability. I keep changing the vegetables and all combinations come out delicious with flavorings. I use homemade sauce and lots of vegetables to make this dish healthier. I have also used fresh Thai basil leaves to enhance the aroma of this rice dish. Thai basil grows well in Tropical climate, so it is easily available in India. The level of spices can be increased as per taste. Ingredients (serves 4)

  • Rice 2½-3 cups cooked
  • Onion 1 medium
  • Carrot 1 medium
  • Broccoli/ cauliflower florets cut into small pieces 1 cup
  • Green/ Red bell pepper 1 medium
  • Thai basil leaves hadfull/ about half cup
  • Whole red chili 1-2
  • Salt 1½ tsp or to taste
  • Oil 2-3 tbsp

Ingredients For sauce:

  • Tamarind paste 1½ tbsp
  • Red chili crushed ½-1 tsp
  • Red chili powder to taste
  • Brown Sugar 1½ tbsp
  • Soya sauce 1 tbsp
  • Water 1½ tbsp

Method of preparation:

  1. Peel, wash, and chop the onions.
  2. Scrap the outer skin, wash, and cut the carrots into small pieces.
  3. Wash, cut the bell pepper into halves, remove the stem and seeds, and cut bell pepper into small pieces.

Method of preparation for the Sauce:

  1. In a bowl take brown sugar and 1½ tbsp water. Mix well until sugar is dissolved.
  2. Add tamarind paste, soya sauce, red chili powder, and red chili flakes in the sugar mixture. Mix well. Keep aside.

To Make Thai Fried Rice:

  1. Heat oil in a wok on high heat. Add basil Leaves and whole red chili. Saute for a few seconds.
  2. Add onions and stir fry for 30 seconds.

  1. Add cauliflower florets, stir fry for a minute. Add carrots and stir for another minute. Now add rest of the vegetables, and fry for a couple of minutes.
  2. Add cooked rice to the stir-fried vegetables. Mix well. Add tamarind thai sauce and salt and stir well the sauce with the rice and veggies. Stir fry for a couple of minutes on high heat. Turn off the heat.

  1. Yummy Fried Rice Thai style is ready to serve. Garnish with crushed peanuts and basil leaves and serve hot.
  2. This rice preparation is very delicious itself but you can also serve it with Thai red curry to enhance the flavor.

Some Tips/ Suggestions:

  1. You can use other vegetables like cabbage, bok choy, bamboo shoots, water chest nuts, baby corns, mushrooms, and even tofu as per taste.
  2. The amount of sauce and spice level can be increased or reduced as per taste.
  3. You can also top Thai rice with some roasted and crushed peanuts. Peanuts give a nice crunch to the recipe.
  4. Thai basil is a tropical perrenial herb that can be easily grown in warm climate. In India it grows in abundance. You can grow Thai basil in a pot or on the ground. It is a maintenance free plant that can survive even in drought like conditions.
