Gajar ka halwa ( Also known as carrot pudding) is a delicious dessert preparation made with grated carrots, milk, sugar, and dry fruits. Gajar is a hindi word for carrots. In India, when winter comes, the treasure of nature is not far behind. Sweet red carrots is one of them. There are different ways to make this mouth watering delicacy. This is the traditional way of making gajar ka halwa. Enjoy this mind blowing delicacy from North of India in this festive season......
Ingredients
(serves 4)
- Grated Carrots about 300 gms (gajar) 2 ½ cups
- Milk 4 cups/ 1 lt
- Sugar ½ cup
- Green cardamoms 5-6
- Cashew nuts ¼ cups
- Pure ghee 1½ tbsp
Method of preparation

Remove the outer green cover of the cardamoms and grind them in the mortar.
- Cut the cashew nuts in half and keep aside.
- Avoid using fine grater to avoid the complete blending of carrots in the milk.

Carrots grated carrots
- In a heavy bottom pan boil milk with grated carrots. After the first boil, reduce the heat and cook carrots in the milk until the carrots absorb the entire milk. Stir in every 2-3 minutes.The total process takes about 40 minutes.

- Add cashew nuts after about 35 minutes or when most of the milk is thickened up.

- Now add sugar, and ghee. Mix in well . At this point stir continuously to avoid the burning of the mixture. Cook for another 10 minutes or until the halwa is dry and absorbs the moisture left by sugar.

- Now add grounded cardamoms and mix well again . Time to turn off the heat.
Delicious and mouth watering gajar ka halwa is ready to offer to gods, and then to serve.
Do not use very fine grater to avoid the complete blending of carrots in the milk.

This halwa recipe does not need khoya. If you do not like khoya or mawa/ condensed milk, reduce the amount of milk in this preparation.
We do not get good red carrots in the western world. That is why my Halwa is orange in color.
